在以上幾種咖哩我個人比較偏好青咖哩, 味道比較溫和, 就算吃不到太辣的朋友也會覺得易入口呀! 今日一於以青咖哩做個濃滑醬汁, 配上蔬菜及意粉做個Fusion的主菜！

Personally I love Yellow and Green Curry. Perfect to serve with white rice. And green curry taste really mild for those who cannot stand too spicy.
平常煮泰式咖哩都會用到椰汁, 今次卻加上椰子忌廉Creamed coconut!

跟椰奶及椰漿不同, 這種椰子忌廉是由新鮮椰子肉脫水再磨成, 所含水份比椰奶椰漿更少。
除了煮咖哩醬外, 也可以加入咖啡, 或代替椰奶做朱古力、蛋糕甜點呀～

- 200g spaghetti
- 2 tbsp Thai green curry paste
- 400ml coconut milk
- 2 tbsp Coconut Matter's Organic Creamed Coconut
- 1 carrot, peel and cut into slices/
- 12 spears of asparagus, cut into 2-inch pieces
- 1/2 purple onion, coarsely chopped
- 1 clove of garlic, minced
- 2 tbsp oil
- salt, sugar to taste
- Cook the spaghetti according to the instruction on the package.
- In a sauce pan, heat the oil in low heat, put minced garlic and stir until it turned brown. Add purple onion and cook until soft.
- Put green curry paste and creamed coconut to thicken the paste. Add coconut milk to get a creamy curry sauce.
- Put carrot and asparagus, cover with the lid and let it simmer for 10 mins.
- Add salt/sugar/water to taste and get the desired thickness of the sauce. Turn off the heat and add spaghetti to combine with the sauce. Ready to serve.
- 意粉 200克
- 泰式青咖哩醬 2 tbsp
- 椰奶 400ml
- 好椰! 有機椰子忌廉 Organic Creamed Coconut 2tbsp
- 甘筍 1條, 去皮並切片
- 蘆筍 12條, 切成2吋長長條
- 紫洋蔥 半個, 切粒
- 蒜頭 1瓣, 切碎
- 煮食油 2 tbsp
- 鹽, 糖 作調味
- 根據包裝上指示, 將意粉煮熟
- 小火燒熱平底鑊並放煮食油, 油熱後加入蒜頭爆香, 再放入紫洋蔥絲炒香
- 加入青咖哩醬及好椰! 有機椰子忌廉爆香, 令咖哩醬變得濃稠及滿有椰味, 再加入椰奶
- 加入甘筍片及蘆筍, 蓋上蓋子煮10分鐘
- 加入鹽, 糖調味, 亦可以加入水去調教理想的咖哩醬汁濃稠度。離火並加入意粉跟醬汁均勻地混合好, 完成!
