今次share呢個cupcakes, 已經做過同教班教過好幾次, 落足法國可可粉同埋70%朱古力, 味道好rich又唔會太漏。做mini cupcake 細細件, 最岩黎緊christmas party同朋友一齊一人一件啦！
Most girls may be fond of all colorful, lovely cupcakes but I do really get freaked out from the buttercream frosting.
This recipe is definitely my ‘Must-Have’ classy recipes, which I had made hundred of cupcakes with them!
They are so moist and rich, with cocoa powder and 70% dark chocolate originated from France. Get ready for Christmas party and share with friends in mini-sized version!
- 植物奶 250ml (可使用豆奶, 杏仁奶, 米奶等)
- 蔗糖 220g
- 葵花籽油 80ml
- 蘋果醋 1 tbsp
- 雲呢拿香油 1 tbsp (可省略)
- 中筋麵粉 210g
- 無糖可可粉 27g
- 蘇打粉 1 tsp
- 鹽 3/4 tsp
- 純素牛油 224g
- 糖霜 330g
- 無糖可可粉 63g
- 70% 純素朱古力 30g, 溶掉至液體
- 焗爐先預熱於攝氏175度, 焗盤內放蛋糕紙模
- 預備蛋糕。於大碗內放豆奶, 糖, 植物油, 蘋果醋及雲呢拿香油, 攪勻
- 於另一碗內將所有粉類材料混合, 隔篩加入豆奶中, 以刮刀攪拌至無粉粒
- 將蛋糕糊分到小杯, 入爐焗15-20分鐘, 取出放涼
- 預備朱古力忌廉。於大碗內放純素牛油回溫, 以電動打蛋器慢速打發至幼滑狀, 加入溶掉的朱古力, 及一半糖霜, 繼續打發
- 加入剩餘的糖霜及可可粉, 打至混合, 放入唧袋, 為杯子蛋糕作裝飾, 完成！
- Cupcake batter
- 250ml plant-based milk (Soy milk/ Almond Milk/ Rice Milk)
- 220g cane sugar
- 80ml sunflower oil
- 1 tbsp apple cider vinegar
- 1 tbsp vanilla extract, optional
- 210g all-purpose flour
- 27g cocoa powder
- 1 tsp baking soda
- 3/4 tsp sea salt
- Chocolate frosting
- 224g vegan butter (Earth Balance Spread)
- 330g icing sugar
- 63g cocoa powder
- 30g 70% vegan dark chocolate, melted
- Preheat oven at 175 degree Celcius. Place cupcake liners onto cupcake pans.
- Prepare chocolate cupcake batter. In a large bowl, place plant-based milk of your choice, sugar, vegetable oil, apple cider vinegar and vanilla extract. Mix well until sugar dissolved.
- In another bowl, put all remaining dry ingredient and combine. Sift all flour in 2 times into the milk mixture, fold well with a spatula and ensure there is no crumbs.
- Divide the batter into liners. Bake for about 15 - 20 mins.
- Prepare chocolate frosting. Put vegan butter into a large mixing bowl and let them return to room temperature. With an electric mixer, beat the butter until they become soft.
- Add melted chocolate and icing sugar (in 2 times), beat until combined. Finally add in all remaining icing sugar and cocoa powder and beat until they just combine.
- Prepare pimping bags and put frosting into it. Decorate the cupcakes with frosting as you wished! Ready to serve 🙂
